the socks looks great! And I think the only thing I ever did with those folded over picot edges *in machine knitting* was to add a tiny elastic into the tube.
I had just had the same thing happen to me with a kid's sweater. Even though the edge was a lot less stitches than the rest of the sweater, it wanted to flare up in the most hideous way! I will try the sweater again and will not knit the edge together but later sew it on, see if that helps with the flare.

The socks look great and I wouldn't notice a thing, who is going to be staring intensely at your feet anyway?

Wow, I don't know if I'd have the guts to do the socks two ways! I know you can buy sock elastic (I think that's what it's called) or sock reinforcer. Just thread it through the first 5 or 6 rows so there's a bit of elastic action. That should do the trick!
